With peach, goats curd, basil and raspberry

With Parma Ham and Soft Boiled Egg
Baby Gem Lettuce, Shaved Parmesan, Ciabatta Croutons and a Yoghurt Caesar Dressing

Chicken, tarragon and sundried tomato parfait
Pickled beetroot, caper berries and brioche toast slice

Herb marinated fillet of chicken
Served with Sautee Wild Mushrooms, roasted corn, saffron and sage mash
With a sauce made of sherry vinegar, caramelized onion and thyme sauce

Apple Tapioca, Buttered Fondant Potato and Chanterelle Mushrooms

Seared loin of Wester Ross salmon
Sustainably sourced and hand-reared in the Scottish Highlands
Marinated in fennel pollen and grapefruit
Served with lime and coriander potatoes, saffron, shallot and chervil cream

Made with Saffron, Butternut Squash, Pine Nut & Gorgonzola
